I found an interesting recipe for using up zucchini. It’s from the Ball Complete Book of Home Preserving and uses 12 cups of finely chopped zucchini which I think was about 4 6-inch zucchinis. I shredded mine with the food processor rather than chopping. Using the food processor is also an easier method for the kids to do.
I like the combination of spices in the recipe – nutmeg, turmeric, and horseradish. I eliminated the chili pepper. The recipe made exactly five pints.
