Baked potatoes are an easy side dish during the week. I always like to bake a few extra for potato salad or to add to a meal later in the week. This Cheesy Twice Baked Potato recipe is another way to use up baked potatoes.
How to Bake a Potato
Slice off a sliver on each end of the potato, place on a baking sheet, and bake at 350 for one hour until tender. For larger potatoes, figure on about 1 1/2 hours.
Cheesy Twice Baked Potatoes
I adapted this recipe from The Use-It-Up Cookbook A Guide for Minimizing Food Waste. If you’re constantly at a loss for ways to use up leftovers, this book is a wonderful resource.
- Baked Potatoes
- Cheddar Cheese cut in cubes
- Heavy cream (enough to cover the potatoes) combined with pecorino romano to taste
- Salt and Pepper to taste
- Preheat oven to 350 degrees.
- Cube baked potatoes, toss in cream to coat all surfaces, and heat in 350 degree for 20 minutes. Add cubes of cheddar cheese and season to taste with salt and pepper. Toss mixture and bake until cheese is melted, about 20 minutes.
I baked my potatoes at 350 for 20 minutes and that seemed fine temperature-wise.
