use it up: simple sandwich

ciabatta sandwichAs part of my challenge to use up food in the fridge, pantry and freezer in May, I needed to use up cream cheese over a month old.

Then I remembered the ciabatta bread I bought at the grocery store to make chicken and mozzarella sandwiches for dinner which never happened. I slice a 3 inch piece of bread off of the loaf and cut the piece in half. I slathered one side with cream cheese, and layered it with pieces of tomato. On the other side, I put romaine lettuce from our garden and topped it with Zesty Zucchini Relish from our pantry.

I cannot wait to make this with fresh red and yellow tomatoes!
