I was in the mood for a fresh tomato or two for lunch, and I needed to use up some food in the fridge. Enter this tomato and bacon salad.
I cut up a yellow tomato (sweet tasting) and a red beefsteak tomato, along with a few pieces of uncured bacon. I’ve been scoring cheap packages of uncured bacon at Amelia’s Grocery Outlet.
Looking through the fridge for salad dressing, I found a container of homemade cocktail sauce – mayonnaise with homemade pickle relish mixed in.
The result was a yummy salad that tasted just like a bacon and tomato sandwich, without the bread.
