Last Friday when it was beastly hot and I really, really didn’t want to cook, I came up with this nifty idea for dessert for dinner – Frozen Pudding Cups.
I had just picked up two boxes of instant pudding from Trader Joes – vanilla and chocolate. My four year old mixed each pudding separately with a wire whisk. I could have used smaller bowls, but I was concerned about the splatter factor.
Since it was warm in the kitchen, I popped the two bowls in the fridge for five minutes to make sure they set before I started the process. Then, using my canning funnel and a ladle, I layered the two puddings in the plastic cups.
Covering the cups with their plastic tops, I put them in the freezer for several hours. Right before we sat down for dinner, I took the cups out and put them on the counter to soften up a little. It was just enough time to keep the pudding frozen, but not too difficult to spoon out.
