When I received the box of Udi’s Gluten Free products to review, I decided to try making soft beef tacos with the gluten free large tortillas. Of course, when my 7 year old son saw me making the tacos for lunch, he wanted to make them himself, making this a cooking with kids project. Booyah! I cooked the ground beef while my 7 year old prepared the shredded cheese, made the fajita seasoning, and helped me put together the soft beef tacos.
This recipe turned out to be a quick, frugal lunch for the 5 of us. The grassfed beef is about $4.50/lb. at Costco. The cheddar is about $3/lb., also at Costco. A package of Udi’s Gluten Free tortillas runs around $6.20. If we already had the fajita seasoning made up, the entire lunch would have taken about 10 minutes to make. The entire lunch probably cost under $12 to make.
- 1 lb. grassfed ground beef
- 2 to 3 T homemade fajita seasoning
- one package of 10 inch tortillas
- one cup of shredded cheddar cheese
- Brown the ground beef in a heavy bottomed pan. Drain the fat if you need to. Grassfed beef is less fatty.
- Add in the fajita seasoning and mix thoroughly.
- Lay a tortilla on a plate and put several spoonfuls of the seasoned ground beef in the middle. Sprinkle on the shredded cheddar cheese, and fold the tortilla up around the filling.

I had no idea Udi’s made gluten free tortillas. I just JUST made fish tacos tonight and I had to leave off the ‘taco’ part for me. This is awesome, thanks!
They have tons of products, and I love that they’re easy to find. You can even order large amounts of Udi’s products on Amazon.
I would like to try these, but can’t find the Udi’s soft tortillas anywhere around where I live. I can get the bread and some of the muffins, but have literally looked everywhere and can’t find them. Tried ordering them from a website and it was going to cost $14.99! That was more than the product. Just crazy!
I live in Milan, In which is about one hour to cincinnati, oh and indianapolis, in. Have even looked there.
