Some sides are so simple, yet they make such a difference to the flavor of a meal. Sauteed mushroom and onions in butter is one of those elusively simple dishes that kicks up the flavor so much.
Mushroom and Onions
5 to 6 mushrooms sliced thickly with the stems removed
2 to 3 sliced onions, depending on your preferences
3 to 4 T of butter
minced garlic, optional
salt and pepper to taste
Heat a skillet, preferably a cast iron one, for a few minutes before adding the butter. As soon as the butter has melted, put in the onions and then the mushrooms, and cook them for about 15 to 20 minutes until done. Add the minced garlic, salt and pepper during the last 5 minutes of cooking time.
I prefer to slice my onions and mushrooms thickly. I like onion quarters for the slices while my husband does onion rings. Everyone has their own little ways.
