One of my favorite simple dinner recipes is Parmesan Chicken. For our family of 7, parmesan chicken is a frugal dinner for me to feed my growing kids. This variation on my standard recipe came from my husband’s cousin, Megan. She shared it last summer when I was looking for new chicken recipes. It quickly became a favorite since the yogurt tenderizes the chicken and gives it a tart flavor to go with the parmesan cheese.
Megan makes this simple dinner recipe with chicken breasts and single-serve Chobani greek yogurt. I made it with chicken thighs and homemade yogurt. I’ve also tried chicken legs which my kids love to eat.
I like to serve this chicken recipe with a side of rice and sauteed green beans.
- 1 c plain yogurt (I used single serving Chobani nonfat greek yogurt)
- ½ c parmesan cheese (I used parmesan shavings)
- 1 tsp garlic powder
- 1½ tsp seasoning salt
- ½ tsp pepper
- Mix ingredients in medium bowl, and spread over chicken. Bake at 375 degrees for 45 minutes.
