Soup is such a simple, yet filling dinner when the autumn days grow shorter. Some of these soup recipes start the night before, and others can be whipped together in 20 minutes or less thanks to pantry staples like tomato sauce and chicken stock. Leftover soup is the perfect soup for all those bits and pieces that are never enough for another dinner.
Simple Soup Base: Stock
Stock is the base of most soup recipes – chicken, beef, or vegetable. Chicken and vegetable stocks are easy to make while beef stock requires a few extra steps like roasting the bones. In my kitchen, I usually skip making beef stock and use Superior Touch Better Than Bouillon Beef Base which I can buy at my local Costco.
To make your own chicken or vegetable stock, collect the ingredients in a gallon freezer bag in your freezer:
- carrot trimmings and scrapings,
- onion ends
- parsley stems
- celery ends
When you have enough chicken bones or a carcass, throw a few cups of stock ingredients along with the bones in a stock pot or slow cooker and bring to a simmer. I usually simmer the stock for 1 1/2 hours in a stock pot and cook it in the slow cooker for about 4 to 6 hours.

Start it in the morning in the slow cooker, and have dinner ready when you walk in the door in the afternoon. Make up a quick batch of dinner rolls or biscuits and you’ve got a dinner the family will be raving about.
