Chicken appears often on my menu plan. Easy to prepare, easy to cook, and versatile, chicken makes up the bulk of the simple dinner recipes on my site, A Life in Balance. For a family of 7, chicken is the cheapest meat to buy with thighs and drumsticks frequently on sale for $.99/lb. Chicken bones have a second life as the basis for stock which in turn flavors rice, soups, stews and casseroles. Truly a versatile, frugal meat for any family.
Basic Cooked Chicken
To save time on simple dinner recipes, precook chicken in bulk. Take sale-priced chicken, preferably with the bones in, and simmer it in a large stock pot along with whole peppercorns, salt, 2 bay leaves and about 1 teaspoon of thyme. Make sure the chicken is completely covered by water.
