Looking for a way to use up ground pork that I bought at Amelia’s Grocery Outlet a few weeks ago, I came up with the idea of making my own sausage patties. These received rave reviews, especially from my 8 year old who loves sausage. On the side I served kale sauteed in bacon grease, and roasted potatoes, always a favorite with my kids.
If you have any leftover, they make for a great breakfast sandwich, or could be cut into small pieces and included in a hearty salad for protein.
4 packages of 12 oz of ground pork
2 cups flavored bread crumbs
1 T thyme
salt & pepper
a few sprigs of parsley
Puree in food processor in batches.
Form patties about 3 inches in diameter & 1/2 inch thick, and flatten slightly to increase the surface of each patty. This helps cook the patties more thoroughly.
Fry in cast iron pan for about 6 to 7 minutes each side. I drizzled a tablespoon or two of olive oil in the pan before putting the patties in to prevent them from sticking at the beginning.
