I’m not always good about eating green vegetables on a daily basis. I always try to cook green veggies several times a week to make sure we have them almost all week. Green beans in any form are one of those veggies I love to eat for breakfast in the morning. However, these salted, roasted green beans make a great snack, too.
I highly recommend making this recipe with fresh green beans. The ones in the picture were about a week old; the roasting helped their flavor. The fresh ones have a crisp snap to them.
These beans are a great last minute side dish for dinner if you’re not using the oven since they only take 15 minutes to roast. It takes about 5 minutes to prep the green beans for roasting. Serve warm, if they make it to the table. I guarantee you’ll be munching on these, too.
- 1 lb. or more of prepped green beans
- olive oil for drizzling
- sea salt for sprinkling
