I wish I could take credit for this idea, but I can’t. But, I love it so much I’m passing it along! It’s a strawberry smoothie using oat milk, and oat milk is made from cooked oatmeal.
I found this recipe this week on Mom2my10, and made up the oat milk immediately. The next morning, I followed the recipe for the strawberry smoothie, halving the amounts for my smaller blender (the original uses a Vitamix).
The kids liked it though they asked for more fruit flavor. I think I’ll pop an extra banana in the smoothie when I make it. My teenager found the big glass in the fridge and drank it immediately. That’s a good thing because he’s not a breakfast eater and this gets oatmeal into his body before he heads off to school.
Another healthy addition would be adding in two tablespoons of coconut oil or flaxseed oil. Oh, and I found that the kids didn’t notice the honey or vanilla missing from the taste when I forgot to add them in one morning.
