We haven’t made this yet, but I’m going to post how much it cost for me to put dinner together. I could have gotten a better deal on the corn beef; I’ll do a quick calculation for that at the end.
Corned Beef Brisket @ 1.79/lb. – $5.84
Cabbage – $.86
6 potatoes – $1.07
6 carrots – $.48
Total Cost – $8.25
If the corned beef is $.99/lb., the cost is $5.63.
Irish Soda Bread
2 cups all-purpose flour – $.18
1 1/2 tsps. baking powder – $.015
1/2 tsp. baking soda – $.002
1/2 tsp. salt – ?
1 T. sugar – $.01
1/4 cup chilled shortening (substituting bacon grease) – FREE
1 egg – $.13
2/3 cup buttermilk (substituting milk with vinegar) – $.16
Total Cost: $.50
I did not include raisins because I don’t have a price for them, and my kids don’t like raisins in baked goods. I won’t be including caraway seeds for the same reason. I wanted to use up our large supply of bacon grease which is essentially free since it comes from frying bacon. I also don’t have buttermilk on hand, but milk with one tablespoon of vinegar makes for an acceptable substitute.
Overall, this is an economical dinner for a family of six eaters with the majority under the age of 6. I’m sure we’ll have leftovers for at least another meal, maybe two.
