Chicken Parmesan
Feeding a family of 6 – 3 adults, 3 toddler/preschoolers
I calculated the recipe based on 3 different prices for two different types of meat.
4.5 lbs. boneless skinless chicken breast $.99/lb.
OR boneless skinless chicken breast $1.49/lb.
OR chicken thighs $.79/lb.
3/4 cup bread crumbs $0 (we use the ends of our homemade bread)
1/2 cup Parmesan cheese $.50
2 T. fresh parsley (used home dehydrated, homegrown parsley) $0
1 tsp. dried basil (ditto on the basil) $0
5 T. butter $.40
1 tsp. Dijon mustard $.007
When meat is .99/lb. Total cost = $5.36
1.49/lb. Total cost = $7.61
.79/lb. Total cost = $4.46
One could calculate the cost of dehydrating the herbs, but I think it’s insignificant. Basically, when I dehydrate my herbs, I do four trays in the dehydrator. The herbs mentioned above are annuals, which cost about $1.99. However, if one keeps cutting the herbs back over the summer, the cost of the $1.99 is spread out over a larger harvest.

We love anything chicken. I have never thought about doing a price breakdown of our meals, thanks for the idea!
