mushroom soup

I’ve had a large bag of mushrooms from the seconds section at Gentile’s Produce Market in my fridge for over a week, waiting to be used. Yesterday, when the kids and I dug up the last of the potatoes in the garden, we discovered an animal had gnawed some of the potatoes. Not wanting to waste 2 lb. of potatoes, I cut off the gnawed areas and used them in this soup recipe from .

Ingredients
6 medium size potatoes, peeled and cut into cubes
20 mushrooms, sliced thinly
4 fresh parsley sprigs, minced
4 garlic cloves, minced
4 T. butter
4 cups water
2 cups of chicken stock
salt and pepper to taste
10 tsp. creme fraiche

Method
Melt the butter in a large heavy-bottomed pot, add the potatoes and mushrooms and stir to coat with butter. Cook over medium heat for about three minutes. Stir often to prevent sticking. Add the remaining ingredients and mix well.

Let the soup cook for an hour, adding additional water if needed.

Once the soup has cooled, it can be frozen. The creme fraiche can be mixed in right before serving. Serve the soup hot.

Notes
The original recipe called for 6 cups of boiling water. I skipped boiling the water, and substituted 2 cups of chicken stock for additional flavor and nutrition. Dried or fresh kale could also be added to the soup. I would add either towards the end of the cooking time.

Sour cream can be substituted for the creme fraiche.

The stems from the parsley sprigs went into my stock bag for making stock this week.

I love that you used the good part of the potatoes – instead of composting them. We are so afraid of "ick" (as a people) that most would have never considered eating them. Thanks for sharing this with us at the hearth and soul hop!

We do a lot of saving of the good parts around here! Very often, one of my younger kids will start an apple, but not finish it. I save these half-eaten apples in the fridge and cook them in a saucepan on the stove, and put them on my oatmeal. Or I'll cut the apple up and serve it with peanut butter.

I could just kiss you for eating those potatoes! I've been freaking out my neighbors lately by picking up apples and peaches from my yard, and eating the half that hasn't been chewed by squirrels. Thanks for sharing with the Hearth and Soul hop.

Your soup sounds delicious! I love mushrooms and potatoes and it's also perfect soup weather. I also hate to waste food. I've been making applesauce with apples that my brother can't sell because they have spots or bad places on them. I just cut those off and the rest of the apple is fine.

Hi Barb, so glad you didnt give in to the critters and toss the potatoes. In times past, everyone had to deal with that and give the animals a little taste! It only means your potatoes were GOOD! I also get produce I know I can preserve in the seconds section. I just picked up a bunch of limes to make whey limeade this week. Yippiee! Thanks for sharing on the hearth and soul hop this week.
