mozzarella, zucchini, and tomato side dish ala Gregoire

We still have lots and lots of shredded zucchini in the freezer from last year. I’ve tried to use it up in zucchini bread which my kids love, but I haven’t had a lot of time to bake recently. Enter my husband, Greg, who decided to make a side dish out of the zucchini. Of course, the kids didn’t like it. We did like it. You will too, because it’s easy, healthy and tasty.

Mozzarella, Zucchini, and Tomato Side Dish

Ingredients

shredded zucchini

8 – 10 oz can of chopped tomatoes

slices of mozzarella cheese to taste over top

Salt and pepper to taste

 

Method

Combine shredded zucchini, chopped tomatoes, salt and pepper in baking dish and mix together. Layer slices of cheese over top. Bake at 35o for 20 minutes or until cooked through.

 

Notes:

This dish can be varied by adding spices, Rotel tomatoes, chopped pepper, crushed garlic, and anything that you can think of. Have fun!

I love this idea! I will probably add yellow squash to it, since those three go together so well. I wonder what other cheeses would go well?

Maybe a cheese with some bite to it that melts well like Fontina?

We also have a ton of shredded zucchini from last year in our freezer. One day, my husband decided to cook some. He just cooked it. It was awful! I wonder if we’d like it better this way, or if we should just stick to using it with zucchini bread.

I would try about a cup first, and see how you like it. Zucchini is so bland that you may want to add seasonings to help with the taste or use canned tomatoes that have flavoring in them.
