We’re in the home stretch for the end of the school year – 21 days. There’s about 4 weeks until the end of baseball season. My sinus infection is going away so I’m hopeful I’ll stay healthy for awhile.
In the meantime, I’m getting constant complaints about a lack of snacks. Yes, I haven’t gone grocery shopping in 2 weeks. Yes, we need fruit. I’d love to go strawberry picking though I don’t know how I can fit the picking time and the prepping for the freezer time into our schedule.
Since I want to reduce the wheat in our diet, I think I’ll buy my way out. I’ll make a run to the grocery store today and stock up on fresh fruit and yogurt. I’m also making use of the freezer and pantry. I have lots of jars of applesauce, plus 2 pans of black bean brownies. My husband can make buttermilk dressing for the kids that like carrots and dip. I can also look at the list of snacks and lunches sitting on my fridge. I know I’ll find some easy-to-make foods that the kids can make for me.
Finally, since the kids don’t have school on Thursday and Friday this week, I can designate one day as a cooking day and make use of my little helpers. If you work, you get to eat – smile!
Monday – Marinated Pork Chops, Spinach and Cheese Custard
Tuesday – Chicken Lo Mein
Wednesday – Tortellini, sauteed veggies
Thursday – Leftovers
Friday – Homemade Pizza
- Make yogurt – Monday
- Make bread – Tuesday, Thursday, and Friday
- Cook hard boiled eggs – Monday
- Make kombucha – Tuesday
- Cut up veggies – Thursday with the help of the kids
