After I did my weekly review, I realized that this is going to be another crazy week. I’m helping out with an event at my children’s school at the end of the week, plus the Kindergarten class has a field trip that day. I’m leaving Friday’s dinner menu up to my husband, and I won’t balk if he decides to order out. I have 2 more sick kids at home, a LNO Committee meeting Monday night, a Venturing meeting on Wednesday, along with 3 soccer practices, 2 lunch duties, and no husband Thursday night.
My plan is to use what we have and keep anything I do need to prepare simple. With 2 more kids sick, appetites are off, and the kids are eating less. Couscous, though processed, takes 5 minutes to prepare. Rice can be made ahead in the microwave. Frozen green beans can be sauted in 10 minutes or so, from the freezer to the pan. If I find I have time on Wednesday and Thursday, I will make a baked ziti dish for Friday to help my husband out.
Monday – Minestrone and slices of homemade bread
Tuesday – Breaded Chicken, leftover veggies, leftover rice or pasta
Wednesday – Spaghetti and Meatballs
Thursday – Flapjacks!
Friday -Hubby’s choice
