With today being Ash Wednesday, it’s time to pull out the meatless recipes. Typically as Catholics, we eat meatless meals on Ash Wednesday and all Fridays in Lent. Since I’m gluten-free, I’d like to try some gluten-free recipes along with the usual pasta ones. Since meat is absent from these recipes, these meatless meals are perfect frugal meals when you need to trim the budget.
I pulled together my meatless dishes along with the soup ones. I could add rice, wild rice, quinoa, and beans to the soups to make them more filling for everyone. I also want to try a few fish dishes to expand our repertoire beyond fish nuggets.
