With 5 kids in my family, I’m no stranger to the witching hour at 5 pm. The kids are flying off the walls. My daughter and youngest son tell me in no uncertain terms they are HUNGRY every 5 minutes. The toilet clogs. The phone rings with sales calls.

No wonder I always use simple dinner recipes that are easy to prepare and usually a hit with the kids. After going crazy making dinner and handling all the crises, I want to sit down to a relatively calm, relaxed meal focused on sharing the highlights of the day, not complaints about the food.
Including my kids in the dinner meal preparation helps me beat the dinner hour stress. Since my husband and I are eating salads with dinner, I assign one child to help make the salad. My 11 year old son loves to help with cooking food on the stove. The younger kids help with drinks and putting out vitamins. Whenever one of my kids makes part of the meal, or all of the meal, we always make a big deal about their work at dinner.
