Taking a cue from the ice cream truck which rolls through my neighborhood after dinner, I’ve been playing with making my own homemade ice cream sandwich desserts for my kids. Vanilla Ice Cream and Chocolate Sugar Cookie
This ice cream sandwich recipe is a simple combination of a chocolate sugar cookie and vanilla ice cream. For those with a sweet tooth, we sprinkled the vanilla ice cream with red sprinkles. You could use any color you want to and match your ice cream sandwich to your holiday.
I used store bought vanilla ice cream for my ice cream sandwich, a perfectly acceptable ingredient if you’re a busy mom.
1 cup (2 sticks) slightly softened, unsalted butter
1 cup granulated sugar
1 tsp. vanilla extract
2 cups flour
1/2 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt

How to Make the Ice Cream Sandwich
1. Make the chocolate sugar cookie dough using a 3 T cookie scoop. Allow the cookies to cool completely before assembling the ice cream sandwich.
2. Put 2 scoops of vanilla ice cream on a cookie placed face down on a plate. Place the second chocolate sugar cookie on top and press down slightly. Press down more firmly to spread the ice cream to the edge of the cookies.
3. To put sprinkles on the ice cream, hold the ice cream sandwich on its side over a plate. Using a spoon, pour the sprinkles over the ice cream, turning the cookie as you go. Shake off the excess sprinkles when you’re finished.
