Cereal, toast, and pancakes can get boring as breakfast options. While you could vary the pancakes a bit, how much variety is there in cereal, a processed food, or toast?
Giant Breakfast Cookies are fun addition to a weekday breakfast menu. The dough can be made ahead of time and frozen, or mix and bake the day before with the help of the kids. Since the base of the cookie is oatmeal and wheat flour, use trail mix ingredients for your flavor inspiration. Instead of vanilla extract, try lemon or orange. Switch out some of the wheat flour for almond flour for additional protein.

- Mix together coconut oil, honey, eggs, vanilla, buttermilk, cinnamon, coconut sugar, and baking soda in a large bowl.
- Add in flour, oats, and shredded coconut and mix well. Add in chocolate chips, and mix again.
- Using a 3 T cookie scoop, put spoonfuls of dough on a parchment-paper lined cookie sheet, leaving space between the piles of dough.
- Bake at 350 degrees for 15 to 20 minutes until golden brown.
Use lemon or orange extract.
Use trail mix, sunflower seeds, dried cherries, dried apples, or raisins.
Substitute almond flour equally for a portion of the whole wheat flour.
