Traditionally known as Shrove Tuesday in the Catholic Church’s Liturgical Calendar, today is Pancake Day in my home. Mardi Gras! Following the tradition of using up rich fatty foods like eggs, milk, sugar, and butter before the fasting and abstinence of Lent, we always have pancakes and bacon for dinner. Except someone forgot to buy the bacon this year. No matter – we’re having a yummy fruit salad with our pancakes, along with a mountain of whipped cream.
Later today, I’ll be in the kitchen whipping up two batches of pancakes – regular ole flapjacks for the rest of the family and coconut flour ones for me. Sure, I could do the coconut flour ones for everyone though this time, I’m hoping to make some extra for myself for meals later in the week.
My 4 year old is helping with the fruit salad. He washed the strawberries and prepped them. Next he’ll rinse off the black raspberries and add them to the strawberries. His last job is tasting the whipped cream to make sure I made it sweet enough. What a job!
- Pancake Recipe
- 2 cups whole wheat pastry flour
- 2 T. organic sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- 2 eggs, beaten
- 2 cups milk - either buttermilk or sour milk
- 4 T. coconut oil
- 1 tsp. vanilla extract
- Put all the ingredients together in a medium mixing bowl and mix until just blended together. Add additional milk if the batter seems a little thick.
- Make pancakes.
