Baked Chicken Parmesan
  • 5 T. unsalted butter, melted
  • 1 tsp. Dijon mustard
  • ¾ bread crumbs
  • ½ cup Parmesan cheese
  • 2 T fresh parsley, chopped
  • 1 tsp. dried basil
  • 8 chicken thighs or chicken breasts
  1. Preheat oven to 400 degrees. Lightly grease a 9 x 15 baking dish.
  2. In a shallow bowl, combine the butter and the mustard. In another shallow bowl, mix together bread crumbs, Parmesan, parsley, and basil.
  3. Dip the chicken pieces into the mustard mixture, and then coat both sides with the bread crumb mixture. (You can freeze the chicken at this point for later.) Place skin side up in the baking dish. Bake, uncovered for 45 minutes.
  4. If frozen, add 20 minutes to baking time and check for doneness.
I used 6 boneless skinless breast. Typically I have used Romano instead of Parmesan since I buy it at Costco for about $5.89/lb. For the fresh parsley I substituted dried parsley from our garden; same with the basil.
