If you have veggie-phobic kids, sweet potatoes can provide cover for carrots and sweet red peppers.
2 sweet potatoes
honey to taste
cinnamon to taste
molasses to taste
- Prick the skins of the sweet potatoes all over, many times. Generally I’ll do about 3 to 4 pricks on each side. This is a great job for a little one.
- Bake the sweet potatoes at 35o for 1 1/2 hours until done.
- Once the sweet potatoes are cool enough to handle, remove the skins, and place the sweet potato meat in a food processor. Process until mostly mashed.
- Add honey, molasses, and cinnamon to taste. Occasionally I will throw in a T. of butter or some nutmeg. Puree and check for flavor. Adjust as necessary.
Note: Include the steamed carrots and sweet peppers during the initial pureeing of the sweet potatoes to ensure complete pureeing.
