I’ve been working on a list of vegetarian meals to stretch our budget. Anything involving pasta and spaghetti sauce is generally a winner in our house. One of the cool things about spaghetti sauce is that I can add things in like pureed zucchini without someone noticing. This is a big thing in a house of toddlers and preschoolers when 5 out of 7 dinners involve someone getting upset about the menu.
I had a basic baked ziti recipe which I added to, but I don’t have prices for the spices that I added in. I’m assuming giving the quantities that the spices don’t add too much to the cost of the meal.
1 lb. box of pasta $.74
2 eggs beaten $.26
2 15 oz. cans of tomato sauce $.32
1/2 lb. of mozzarella cheese $1.25
1 lb. of ricotta $2.50
1/4 cup of Parmesan cheese (need to calculate this)
1/2 teaspoon nutmeg
1/2 teaspoon black pepper
pinch of salt
Total cost $5.07 (adding in the Parmesan and spices will probably bring this closer to $6)
Given an approximate cost of $6 for 24 servings, each serving is $.25.
I plan on substituting tofu for part of the ricotta and adding veggies to the tomato sauce; I’ll post that version when I make it. If I were to use our homemade tomato sauce, it would essentially be free. We grow and can our tomatoes and only pay for the cost of labor and canning supplies. The cost of canning supplies are very low for us since we’ve been canning for about 15 years.
