calling buttermilk experts!

by babhoyersh on June 23, 2011

Someone asked about the differences between the types of buttermilk over on . I answered to the best of my knowledge, and I’d love to hear from the experts!

I have made my own cultured buttermilk which is incredibly easy to do at home. I highly recommend it if you use a lot of buttermilk in your kitchen.

Hmm, I am aware of a few different cultures that are used to make different cultured milks. There is filmjolk and viili that I have used. But then there is real buttermilk from making butter. It is thin and watery and slightly sweet. My kids LOVE it. I am not on FB because I am living under a rock, so I can’t peak and see what the question is. Is it about the differences between cultured milk and buttermilk or about the different cultures?

No problem. The poster wanted to know if and how she could make buttermilk from the buttermilk produced from making butter. I’m not sure that kind of buttermilk has the same ability to reproduce that cultured buttermilk does since it’s created by a different process.

Yeah no you can’t use the buttermilk from butter. They’re both CALLED buttermilk but they’re two totally different animals. It’s too bad that cultured milk didn’t have a different name. It confuses people.

It IS confusing that the use the same name! I always try to be very clear and call it “cultured milk”. I have known people who used store bought high quality sour cream and used it to culture milk and cream, saving some each time. So if it is a question of frugality or just where to get starter, this could work.
