I think we’re all about the food this week! I’ve certainly missed cooking with all the back to school busyness. Each morning after dropping the kids off at school, my 3 year old and I come home and start our day together making a snack and starting dinner. I’m finding that making food at the beginning of the day rather than waiting until naptime helps me pace myself during the day.
Today’s recipe comes from Simple Bites: Crisp Topping, and was featured in a post about warmer weather batch cooking.
I made up the crisp topping in August and froze it in pint jars. Last week, I wanted to make a peach crisp, however, I didn’t have enough peaches to fill the 9 x 13 pan. Enter apples from our apple tree. Since the crisp topping is already sweet, I did not add any spices to the fruit. I laid them in a single layer in the pan and broke up the crisp topping over top. I baked the crisp in a 350 degree oven for about 20 minutes.
